Are you going to be cooking with direct or indirect heat? Cooking with indirect heat means that you have the hot coals or burners on the opposite side of the grill from what you are barbequing. This is very important when barbequing ribs or brisket. Generally speaking if it is going to be on the grill for more than 10 minutes you're going to want to use the indirect heat trapped inside the grill to cook you food.
Sweet Baby Ray's team adds this renowned barbecue style to its all-star lineup during the month of July. You may not be able to get Ray's unique quarter smoked chicken with burnt ends, (the savory pieces of meat cut from the ends of a smoked roast beef brisket) anywhere else in the city or burbs. It's served with the Original Sweet Baby Ray's Stovetop Recipe BBQ Sauce, a side of Kansas City style barbecue beans, Kansas City coleslaw and white bread for ($10.49). Add one-third slab of Baby Back or St. Louis ribs for only $4.
Most cookers do not provide the heat directly to the meat. They are constructed so that the fire is normally in an offset fire chamber. This is so that the heat and smoke will move around and through the meat indirectly. The food will never come in direct contact with the flame and as such will not get burned. Also, because the meat is not directly over the flame, any juices or oils that may drop will not cause the flame to flare up.
